Practices on record
A practice is a lens over published claims: a named thing a customer or worker can document, mapped onto the claim categories the record already uses. The count is the number of published claims in that practice's categories.
Observable
Documentable from the checkout screen or the receipt alone. A photo is the record.
The lowest suggested tip on the screen is 20% or more, or the highest is 30% or more. Every major point-of-sale vendor ships lower defaults.

A tip amount was already selected when the screen appeared, or the option to leave no tip was small, hidden, or behind an extra tap.
